And so it's the time of year where we dedicate one day completely to our mothers who have done everything, and more, for us.
This year, I made a multitude of Mother's day cupcakes together with my mom and this is how they turned out! If you'd like to read about how I did it, click the 'read more' button below.
These muffins were incredibly easy and such fun to make, so give it a try!
Chocolate Muffins:
I actually found this recipe online here.
- 2 eggs
- 1 cup (220 g) Chelsea White Sugar
- 1 cup (110 g) standard flour
- 6 Tbsp unsweetened cocoa powder
- 2 tsp baking powder
- 1 tsp vanilla essence
- 2/3 cup (160 ml) milk
- 2/3 cup (150 g) butter
Preheat oven to 350°F (Gas mark 4 or 180°C) Grease 6 extra large muffin tins or cups (paper muffin bake cups are recommended) or 12-15 medium cups.
Beat the eggs with Chelsea Sugar, mix with flour, cocoa powder, baking powder, vanilla and milk. Fold in the melted butter. Add chocolate chips (please note that these might end up in the bottom of the muffin). Bake at 350°F/180°C until a wooden skewer is inserted in the center and comes out clean. Baking time is approximately 20 minutes for medium size muffins.
Icing:
The icing was pretty simple to make too, all you need is:
- Philadelphia Cream Cheese
- Icing Sugar
- 1 tsp water or milk
- Red food coloring (optional)
Start with one small-ish bowl and one larger bowl. In the larger bowl, add some hot water and place the smaller bowl inside the larger one. All ingredients will be added to the smaller bowl, the larger will heat the contents of the smaller bowl without burning it.
Add cream cheese according to how much icing is needed, I basically just estimated, and begin to stir the cream cheese until it is soft and smooth. Once soft, add icing sugar (again, just estimate) and mix the two together. Add a teaspoon of water or milk to further soften the mixture.
Your icing is now ready!
If you would like to make your icing stand out, add food coloring! I used a drop of red food color (be very careful, food color is usually very strong) and stirred it together to create a soft pink color.
